Eggs Benedict…because you deserve it

Maybe you think it’s too hard. But, I am here to tell you that creating a delicious Eggs Benedict in the comfort of your own home is possible. Just follow my recipe. Let me know how it works for you!

Eggs Benedict

Eggs
Bacon (I just used regular bacon)
English Muffins (Or maybe croissants?)

for the Hollandaise Sauce:
1 cup butter
3 egg yolks
1 tablespoon heavy cream
1 dash ground cayenne pepper
1/2 teaspoon salt
1 tablespoon lemon juice

Poach your eggs:

1. Boil water
2. Crack eggs into the boiling water

Or maybe you have a egg poacher you’ve never used like I have. It has little cups to break the eggs into and sits over a pan of boiling water.

Cook your bacon or ham.

Toast the English muffins.

Hollandaise Sauce:

1. Melt butter until bubbly in a small pan. Remove from heat before butter browns.
2. In a blender or large food processor, blend the egg yolks, heavy cream, cayenne pepper, and salt until smooth. Add half of the hot butter in a thin steady stream, blend in the lemon juice, then the remaining butter.

Okay, now put it all together.

Open English Muffin
Bacon
Egg
Hollandaise Sauce
